When we say we love experimenting with coffee, this is what we mean. First we placed unroasted coffee in a small, fire-charred rum barrel. We let the beans rest for 15 days allowing for an infusion of the flavor notes to be imparted to the coffee. Next we do a medium roast to bring out the chocolate notes while preserving the rum flavors. The result is a sweet and spicy (cinnamon, clove, and nutmeg) coffee with deep molasses, caramel, toffee notes, plus hints of smoky wood with a dark chocolate finish. No additional flavorings are used.
