This is a high altitude, honey process coffee, which means this a ton of flavor complexity and more sugars available before roasting that show up the cup. We take great care to not scorch or burn these sugars during the roasting process to ensure the extra effort done by the coffee farmers pays off. We always get excited about honey process coffees because they really are sweeter and offer more flavor complexity.
Medium to heavy bodied Ethiopian coffees are always a treat and this one brings lots of body as well as flavor. When you grind these beans, the aroma of blueberry sweetness lets you know you are in for a delightful cup. In the cup we are getting honeysuckle notes, blueberry, sugar (caramel, toffee), vanilla, floral, and a lingering finish.
