When we say we love experimenting with coffee, this is what we mean. 💞 Here is our latest, small batch artisan coffee:

✨First we placed unroasted coffee in a small, fire-charred rum barrel. We let the beans rest for 15 days allowing for an infusion of the barrel flavor notes to be imparted to the coffee. 🌟Next we do a medium roast to bring out the chocolate notes while preserving the rum flavors. ☕The result is a deliciously sweet and spicy (cinnamon, clove, and nutmeg) coffee with deep molasses, caramel, toffee notes, plus hints of smoky wood with a dark chocolate finish.

🤓 Thermodynamics & Nerd Info: ☕ When coffee beans are roasting, they begin as ENDOTHERMIC, meaning they take in heat. This starts the Millard reaction, the thermal and primarily chemical process by which beans turn brown. Amino acids and sugars create new compounds as a result of applied heat. The amazing thing is that over time, the beans become EXOTHERMIC, meaning the beans no longer take in heat, but PRODUCE heat. Which means they become hotter than the environment around them. The readout here is the bean temp (top) and the air temp (bottom).
